What to Expect
Hand-pounding a curry paste from scratch in a stone mortar — the base of northern Thailand's signature khao soi, a coconut curry noodle soup with Burmese and Yunnanese roots unlike curries found elsewhere in the country — then building the full bowl from that paste.
How to Prepare
Expect the pounding itself to take real physical effort; it's normal for a teacher to finish the paste if arms tire. Wear something you're comfortable getting a little turmeric-stained, and come hungry for a full bowl of khao soi at the end.
