Udon Thani's markets serve a large local population rather than tourists, so the food is unfiltered and often spicier than the versions served in Bangkok or resort areas.

Ask for \'not spicy\' (mai phet) explicitly if you're sensitive to heat — Isan food's chili levels genuinely exceed most visitors' baseline expectations. Come hungry and plan to share small portions across several stalls rather than filling up at the first one.
